INGREDIENTS

8-10 stalks of rhubarb

1 tsp fresh lemon juice

1 tsp lemon zest

1 tbsp raw honey plus more for drizzling

pizza dough recipe instructions are for Trader Joe's Pizza dough, but any pizza dough will work, gluten free to make this recipe GF

1 cup part-skim ricotta cheese

1 tbsp freshly torn mint leaves

 

INSTRUCTIONS

RHUBARB

Slice rhubarb into 2 1/2" pieces. Toss together with honey, lemon zest, and lemon juice. Spread out evenly on a baking sheet and roast in 350° oven for 8 minutes or until just tender. Remove and allow to rest.

 

PREPARE FLATBREAD

Preheat oven to 450°

Allow dough to come to room temperature for 10 minutes. Sprinkle flour on a clean work surface and roll dough into a rectangle to fit your quarter baking sheet. Place in oven for 8-10 minutes or until brown.

Remove from oven, top with 1 cup ricotta cheese, and carefully arrange rhubarb on top of ricotta. Put back in oven for 5 minutes.

 

Allow to rest for a few minutes then drizzle with honey and fresh mint.
