Strawberry Avocado Salad with Crumbled Blue Cheese
Sweet strawberries, creamy avocado, and addictive blue cheese come together to create the world’s most perfect strawberry avocado summer salad.

INGREDIENTS
SALAD
-One head of lettuce washed and trimmed into bite size pieces
-2 cups sliced strawberries
-1 cup grape tomatoes sliced in half
-1/2 cup diced kirby cucumbers
-1 avocado sliced
-1/4 cup sliced red onion
-1/4 cup walnuts
-1/4 cup crumbled blue cheese (I used gorgonzola dulce)
DRESSING
-1/2 cup good olive oil
-1/4 cup white balsamic vinegar or regular balsamic will work
-1 tbsp honey
-1/2 tsp sea salt
-1/4 tsp black pepper
INSTRUCTIONS
Combine all ingredients in a large bowl.
Prepare the dressing by whisking together all ingredients until well combined (you can also add all ingredients to a mason jar and shake, shake, shake).
Dress the salad with 1/2 of the prepared dressing, toss well to combine and taste. Add more dressing if desired, otherwise reserve remainder of dressing in fridge for 1 week.
